Meal planning is one thing we are doing to help us reach our goal of getting healthy in the new year. With the help of Google, my trusty Crockpot, and freezer meals, I hope to stick to this to save our family money and keep us eating healthier!
I’ve started using Google Drive to organize the recipes I have been pinning to my Pinterest Boards. I copy the recipes into a Google Doc. By placing an image at the top, each recipe has a picture that makes selecting meals easy.
I pick the meals for the week and put them on our meal planning calendar in Google Sheets along with a shopping list. This makes it easy for Dave to look at too when he is wondering what is for dinner, or what he needs to pick up from the store.
Each week, I will try to come back to the blog and share our meals for the week, with links to the recipes and our thoughts on the meal. Check out this week’s recap!
This week we stepped out of our comfort zone with non-traditional tacos, using ground turkey instead of beef, and trying out freezer meals for the first time. All of our risks paid off with a successful first week of meal planning!
Sunday: Crockpot Beer Cheese Soup
I attended Ohio University. The Pub, a bar on Court St., was known for their delicious Beer Cheese Soup. Living several hours away, I haven’t made it back for some of that cheesy soup in years! I’ve made beer cheese soup at home before, but was looking for a recipe that I could use in the Crockpot for a cold winter day while being productive around the house. One of the productive things I was able to do was prep a couple of freezer meals for later in the week!
I found this recipe from Fresh Family Meals for a Crockpot Beer Cheese Soup. It was perfect! I loved that it also was filled with vegetables. Dave enjoyed this recipe more than the beer cheese soup recipe we used to make.
Monday: Lemon Pepper Chicken **Kristen’s Favorite**
The first freezer meal we enjoyed this week was a slam dunk! It was the delicious Lemon Pepper Chicken from New Leaf Wellness’ post Make 7 Healthy Chicken Crockpot Freezer Meals in Under and Hour. The flavor of the chicken was amazing, and I enjoyed it over a salad the following day for lunch. For dinner I served it with white rice and broccoli.
Tuesday: (Not So Skinny) Skinny Cheeseburger Casserole **Dave’s Favorite**
I say “Not So Skinny” because we ended up using regular elbow macaroni and shredded cheese instead of whole grain and reduced fat. We will probably try the “skinny” version of this flavor packed recipe from Skinny Mom. With only 20 minutes of prep time and 25 minutes in the oven, this was an easy meal to make after getting home from work.
Wednesday: Skinny Taco Stuffed Peppers
This was my big risk meal for the week. I love my traditional Mexican tacos, and wasn’t sure how they would be without the tortilla, or with ground turkey. They ended up being amazing! I loved them with the avocado, and added in some Fiesta Party seasoning from Tastefully Simple when I browned the meat. I kept this recipe from Skinny Mom “skinny” this time.
Thursday: Cheesy Tortellini and Ground Beef
Thursday night was a late night at work for me, so we used the second of our Crockpot freezer meals for the week. I thawed the bag in the freezer over night, put it in the Crockpot in the morning, and left directions for Dave for when he got home from work. It was an easy way to have dinner ready for my family, even if I wasn’t there. Since I wasn’t there, there is not picture for this one, but it was enjoyed by all! Another great meal from New Leaf Wellness, this time from their 7 Kid-FriendlyFreezer Meals in 85 Minutes post!
For the weekend, we enjoyed a night out with friends on Friday and leftovers on Sunday. That is another great part about meal planning is that we have plenty of leftovers for lunches and an easy leftover night.
