Another week, another Our Week in Meals! This was a busy week with a lot of events and travel, which meant not a great week for meal planning. We were still able to enjoy a couple of our meals from last weekend’s freezer meal prep session though!
Sunday was a surprise party for Dave’s brother, which meant no meal-planning necessary (yes!). Monday we did our freezer meal prep session. Since we were busy putting together 7 awesome meals for the upcoming weeks, we enjoyed some pizza from Whole Foods Market before the prepping began. I had never had their pizza before, and it was delicious!
Tuesday: Thai Peanut Chicken **Dave & Kristen’s Favorite**
I ended up staying home from work Tuesday due to snow and being sick, so I got to be teased by the amazing aroma of this dish all day as it cooked in the Crockpot. I was anticipating Dave’s arrival home from work so we could enjoy this dish finally! At meal-time, I chopped up some scallions, cilantro, and peanuts to top the chicken with, and put it all over rice. This dish was so good. Next time (and there will definitely be a next time) we will have to make a double batch because there were no leftovers! This was my risk meal for the week. I typically don’t eat a lot of beef, especially roasts. Even handling the meat during the freezer meal prep session was a stretch for me! I’m not the expert on roasts, but Dave said it was great. I did eat it, and although it wasn’t my favorite, I did enjoy it. We served the roast and carrots with a side salad. The rest of the week we were out of town visiting my family. This meant either my mom was cooking (yay!) or we were out to eat.
Not an exciting week of meal planning, but we have several planned for next week to share!
